Sunday fun-day with Hetty

I’ve had a great weekend with family. I’m happy it all went so well, the food turned out great, and having my aunt Liv over for dinner was great. I was supposed to make milkshakes for today’s post, but somebody drank up all the milk, and when I just minutes ago ordered this week’s groceries online I forgot to buy milk. But most likely I’ll be going downtown to the local grocery store just in time for the weekend, I’ll be sure to pick up a bottle of milk so I can make the long wanted milkshakes next Saturday or Sunday.

I got some good stuff coming out this week, some food talk posts, one about the New York food culture and there will be a new recipe or two, maybe, even more. All this is coming up this week. I’m excited about starting a new week with new posts.

Tomorrow I’m starting the new week and the morning with coffee and most likely not blueberry tea. We’re getting another heat wave this week, It’s nice but yet it’s not because we only got A/C in the living room which means the rest of the house is like a 400-degree oven on speed. Basically, I will be working from the living room the next week or so and not in my office. ( because my home office will then be a 400-degree oven on speed. )

I will give you a more detailed plan on what will be coming up this week, what kind of recipes I’ll be making and posting and what topics I will be talking about.

Hetty’s herb/Evoo marinade

Hey everyone!

Its Saturday, my aunt Liv is visiting. I’m exhausted because lucky me got some

Kind of virus, so I’m balancing between sleeping, eating, and taking painkillers. So yet another morning with blueberry tea with honey for me.

But sick or not sick, dinner needs to be made and I’m really excited about it. I was supposed to make pork tenderloin but we’re having chicken fillets instead, served with rice and a Greek salad.

I’m making my Evoo and herb marinade for the chicken. The thing I love about this marinade is that not only is it extremely almost embarrassingly easy to make but it goes with everything. Beef, pork, chicken or turkey. It’s perfect and you can easily spice it up a notch by adding chili flakes or garlic. So today I’m proudly giving you my Evoo/herb marinade/glaze.


EVOO ( Extra virgin olive oil)



Fresh thyme

Fresh parsley

Fresh rosemary

Fresh oregano

How to make Hetty’s herb/Evoo marinade;

1. Start by washing the herbs, then chop them up and put them aside.

2. Brush the chicken with olive oil, rub in the salt and pepper before rubbing in the fresh chopped herbs.

It’s as simple as that, and it tastes amazing.

Friday, family, food and friends


Hey everyone!

Tomorrow I’m making pork tenderloin, and I’m using my own herb marinade. I love making my own glazes and marinades using herbs from my garden and EVOO. At this point, I’m not very good at making my own spice blends when it comes to dried spices, but I’m planning on getting better at it. You can literally make any spice mix yourself, but in order to do so, you need a ton of different dried spices in your cabinets. ( Something I don’t have. Well, I do have a lot of different dried spices in my spice cabinet but yet there are a ton of different spices missing in order for me to make my own spice mixes. For now, I’m sticking to pre-made seasoning blends until I can afford to buy all the dried seasonings I need to make my own seasoning blend.

As I mentioned, tomorrow I’m making my own fresh herb and EVOO marinade/glaze for the pork tenderloin I’m making for dinner tomorrow. I’m pretty excited about it. I’m going with simple side dishes to serve it with. I’m only serving it with rice and a Greek salad. I know it sounds too easy, and maybe I should make a fancy side dish to go with a good piece of meat like that. But the truth is that we’re most likely getting my aunt Liv over for dinner tomorrow and this was what I had laying around, and I haven’t been able to go to the grocery store for a while, so I had to use what I could find around the kitchen to make for our family dinner, and so I intend to do. Working with what I have is something I normally enjoy doing, but from time to time it can be a little bit boring or a little too simple. But I sometimes you don’t have a choice if you have a pork tenderloin, fresh herbs, EVOO, a cucumber, a couple of tomatoes, a piece of feta cheese,  rice,  salt and pepper and it so happens that you’re suddenly hosting a family dinner for your aunt. Then you have to improvise and so I’m intending on doing.

As I’ve said earlier I’m really excited about this herb marinade I’m making. I will post the recipe tomorrow and hopefully you will enjoy it as much as we do.

On Sunday I’m making milkshakes and I haven’t made milkshakes in over a decade so I’m super excited about it.

Hey everyone!

Today was a sunny day, another day with blueberry tea. But I made an amazing breakfast earlier.

Breakfast is the most important meal of the day. I always make time for eating. I love having large family breakfast and at my house we normally have large family breakfasts on special events such as Birthdays, Thanksgiving, 4th of July, Easter Sunday etc.

When we do have our family breakfast we normally have a variety of things to put on croissants or buns. We usually have scrambled eggs, grave Lax or smoked salmon, a variety of salami, ham, cheese and all kinds of things. That way people can eat what they want.

Today I decide to have fresh bagels and buns for breakfasts they turned out pretty great. I do love it when good meal comes together. The thing about bagels is that you can eat them as is or you can stuff them with salami, ham, lettuce, tomatoes, cucumbers,cheese literally anything you want. That’s basically what I did today. I love a good bagel, and I want to learn how to make them from scratch one day for sure.

Hetty’s food truck discovry


Hey everyone!

We all know what a food truck is, a large vehicle equipped to cook and sell food. Most of them have onboard kitchens so that they can cook food from scratch. Each food truck normally has their own concept. Some specialize in sandwiches, hamburgers, fried products, tacos, desserts. Pop-up kitchens have also evolved over the years and are becoming more and more popular around the nation. A pop-up restaurant is basically food trucks that offer gourmet food in a variety of specialties and ethnic menus. Food trucks with portable food booths and food carts are actually now on top of the street food industry, and did you know that serves about 2,5 Billion people every single day? It’s pretty amazing when you think about it.

Only a few decades ago food trucks were normally located around construction areas to feed the construction workers during lunch time. Now you can find a food truck on every corner of the city.

In the Us, there are specialized food truck outfitters that are offering a start-up service that in fact can include concept development, training, and business support in addition to outfitted trucks. It’s a billion-dollar industry, it’s a very attractive business and it’s up and going.   Thinking about it food trucks have been active since the 1800’s. Of couse, the circumstances were very different back then, but It’s kind of cool to think about how old the food truck phenomenon actually is. Who would have thought that there were food trucks back then? well, there was.

You also have food wagons in Central Park where you can buy hot dogs and pretzels. There are so many different versions of food trucks and food wagons and what they have to offer. But everything considered food trucks and wagons are pretty awesome and street food can be as good as a meal at your local diner or restaurant.

Who knows, maybe one day I’ll be opening up my own food truck, or not. Either way, I will continue to stop by some of the local food trucks for some good street food lunch someday that’s for sure.

A cup of blueberry tea

Hey everyone!

Today the weather is better than yesterday, the sun is shining even though the wind is still pretty strong.

Another day with blueberry tea instead of my usual coffe, still feeling a little under the weather and aparently blueberry is supposed to do the trick. I was suppsed to go to the grocery store this week, but since I wasn’t feeling too good I decided to order my groceries online instead. Food-delivery services have become more popular over the years, and I can see why. I do love going to the grocery store though, to pick and choose from the ingredients I see in fornt of me. See what goes well with what and witch products are in perfect shape. The thing about ordering groceries online is that you don’t get to pick your vegetbales as you see them, you  put your trust in others do it for you. This can be a problem if the person have no clue what’s good and bad. For example, last week I ordered some strawberries in this online grocery store. They where in really bad shape, and I mean they litterally had fur. when I’m  picking up a basket of starwberries in my local grocery store I make sure that the strawberries are eatable. But aside from the vegetebal and fruit selectioion theese people do online gorcery shopping is perfect when you’re not feeling too good. We all need groveries even though we’re feeling a little under the weather, so as an alternative to drive down to the local grocery store when you’re feeling like the only comfterble place to be is at home it’s a great alternative.

From blueberry tea, online shopping and feeling a little under the weather to something else. What do you all think about milkshakes? I mean back in the day people used to go out for milkshakes after school, either to the dairyshack or a local diner that had the best milkshakes in town. Now It’s all about the coffee, and I love coffee but every once in a while I get the cravings for a good milkshake. That is why I’ve decided to give you my favorite recipe for milkshakes this week and I’m really excited about it. I  might actually make three. One chocolate, one vanilla and one strawberry. I have to check if I have all the ingredients but hopefully I do. This will be fun, I haven’t made Milkshakes in a while so I’m really looking forward to it.

What’s coming up this week on Hetty’s home kitchen?


Hey everyone!

I can hear the raindrops banging on my office window, the wind is making the house creak. I get a strong feeling that we’re in late October, the night before Halloween or so. Who were to believe it’s June with this kind of weather. I’m drinking my blueberry tea and it makes me think back to 2013, a time where I used to drink a lot of blueberry tea. these days I’m drinking more coffee than a truck driver or so it might seem. But I was feeling a little under the weather and thought that blueberry tea with two teaspoons of sugar and a topped teaspoon of honey would do the trick. I actually love writing when it’s raining and when the wind makes my house creak. Well, enough about me and my blueberry tea, now let’s take a closer look at what’s coming up at Hetty’s home kitchen this week.

I got three new ideas/recipes coming up this week that I’m really excited about. There will be a post coming up on the food culture in New York, as well as food talk special with Hetty and much more. I’m really excited about this week’s posts.

I’m taking the rest of the day off to concentrate on my book. It’s funny, it’s only June and with all the Christmas related topics in my book I can’t help but wondering and planning possible gifts for my family this Christmas. I shouldn’t be thinking about Christmas in June, it’s insane .. I know. But when you’re writing a Christmas novel, it’s hard not to get in the Christmas spirit you know. It’s silly, but it’s the truth. I wonder about all the fun Christmas cookies I can make and share with all of you. But let’s not take December in June, let’s focus on this weeks post, and let December be December and June be June.

Cook with what you have


Hey, everyone!

The other day I was asked if someone could book my food truck for an event. I was honored to be asked. But sadly I don’t have a food truck so I had to gently decline. But the fact that someone actually liked my food enough to ask is amazing. I’m truly honored.

When you watch cooking shows on TV, almost all of the chefs have their own opinion on what you HAVE to have in your kitchen cabinets. Not only that but they also make it seem like they always succeed and that nothing can go wrong. When I started watching cooking shows and reading cookbooks I felt like every recipe I followed turned out tasting wired or far from good. Then the chefs on the TV said if it doesn’t taste good, or if you didn’t like it you most likely did something wrong, or you added ingredients that weren’t supposed to be there. It started to piss me off because I did everything they said, and it wasn’t good. So I decided to start a new concept, something that would be suitable for every home cook out there. Encourage people to use what they have in their cabinets. Because the chances are high that our kitchen cabinets don’t look the same. We all have our favorite spices and ingredients that we like to use. We all are different and we like different types of food. In most of my recipe, I try to let people use what they have.

It’s all about taking what you have and make something great out of it. If I’m making an omelet with veggies, sausages and you don’t have sausages or the spices I’m using you can easily switch out the sausages with slices of pork, or beef and you can use seasoning mixes that you are comfortable with, that you normally use in your cooking.  There is no limit to what you can do with food, you make the most incredible dishes with as many or as few ingredients that you want. Making a new dish from what you have laying around can be challenging but it can also be fun, and you get to use your creativity. I’ve said this before and I’m saying it again. If you need help with your cooking, if you have a list of ingredients and seasonings you can write me an e-mail and I’ll give you some ideas on what you can make with what you have. We’re not all creative and I know it’s hard to figure out what to make for dinner. I used to have the same problem, and still do sometimes. Anyway, I’m here if you need me, know that.

Hetty’ s Tropical – refreshing summer drink


Hey everyone!

It’s Saturday, and today I’m giving you a recipe on what I would like to call Hetty’s tropical. I came up with this drink simply testing out different flavors and simply experimenting to get a fresh and good flavor balance between sweet and sour. What I ended up with was Hetty’s tropical, and it turned out to be super tasty and a hit at our house. NB; This recipe contains vodka. This drink is perfect for girls night out or if you just want something refreshing to drink on a hot summer night.


4 Ice cubes

2 Cups pineapple juice

1 Cup Tom Collins drink mix (sour)

1 Cup tropical juice

2 teaspoons sugar

2-3 TBS Vodka

Pineapple slices ( Garnish)

Strawberries ( optional garnish)

2 straws in different colors

1 Tall cocktail glass

How to make Hetty’s tropical:

  1. Add all the ingredients into a blender or a mixer ( preferably a blender.) Blend until the ice cubes are crushed and until you get a foamy consistency.
  2. Add the drink mixture into a tall glass, garnish with pineapple slices, maybe some strawberries if you want an even fresher look. Add two straws in different colors and you’re ready to serve.

This is super easy to make and it’s refreshing to drink, perfect for the summer heat, girls night or even as a welcoming drink at a summer party.

Hetty’s May Cake


Hey everyone!

It’s Friday, and what’s more perfect than a good chocolate cake to celebrate the weekend is finally here again? This is my all-time favorite chocolate cake. I’m going, to be honest, and say that I’ve never baked this cake myself, my mom always makes it for my birthday every year. But I will be learning how to bake it soon, and according to my mom, it’s pretty easy to make. I’ve posted this recipe before but are now reposting it as requested. I hope all of you love this recipe as much as my family and I do.


1 Cup  Butter

1 Cup Granulated sugar

3 Eggs

1 Cup All-purpose flour

0,5 cup Cocoa powder

2 TBS Cornflour

2 Tsp baking powder

1 Tsp vanilla sugar

0,5 Cup whipping cream

1 Cup applesauce


0,5 Cup Applesauce


1/2 Cup Butter

3 TBSP Cocoa powder

2 Cups Powdered sugar( icing sugar)

2 Tsp vanilla sugar

1 Egg



Instructions on how to make my May Cake:

Start by Pre-heat the oven to about 350 degrees. Then mix sugar and butter until smooth. Add one egg at a time, and mix it well together. Add the flour, cornflour, baking powder, Cocoa powder and vanilla sugar and mix it all well together. Then you ad the whipping cream and the applesauce. When you’ve mixed everything well together, pour the mix into a grated baking form that holds about 1  ½ L. Cover it up with baking paper. Bake the cake in the oven for about 45 min. When you take the cake out of the oven put it aside and let it cool down completely.

Melt the butter for the frosting and let it cool. Then add Cocoa powder and vanilla sugar. Whisk one egg together, and add it to the mix. Then whisk it all good together until you have a smooth frosting.

Cut the cake in half, so you end up having two layers.  put one layer of applesauce on the bottom layer of the cake, then add 1/3 of the frosting on top. Gently place the top layer on top and cover the whole cake with the rest of the frosting.

Cut strawberries in half(sideways) and decorate your cake with fresh strawberries. It will look fresh, and tasty. We all know how well Chocolate and Strawberries go together.
