OMG! What a week!

Hey everyone!

I don’t even know where to beign, I will starart at the begining. Just when I thought I’m ready to start my life again, something happened. The night of my last post I realized that I had a lump of infection under my right breast and I went stright down to the local medical center. They told me I had to go to my regular doctor the next day over. When I got to my regular doctor, he was on vacation so they told me to speak to this intern instead. He looked at the lump of infection and he told me he was afraid I would get blood poisening and that I had to have a minor surgery the next day. I had an early apointment at the hospital and got the minor surgery, I was only sedadted so I was awake the whole time. Ever since the surgery on Friday I’ve been trying to recover as best as possible. I went back to the hospital on Monday morning for a check up, and they said everything looked good, and that everything was starting to heal perfectly. But they are still a little worried about me getting a bloodpoisening so if I get infected again while I’m on my vacation I have to go to the hospital asap while I’m there, somehting I’m not really happy about doing if that happens. I’m exhausted, but I’m leaving for my vacation tomorrow, first stop is the airport hotel where we’re spending the first ngiht then we leav on Thursday morning. Our plane leaves at 6.45 am. Can’t say I’m looking forward to wake up in the middle of the night but oh, well.

inflammation, food and cooking!

Hey everyone!

What a week, or what some weeks to be honest. The night of my last post I suddenly got this intense pain in my left hand, I didn’t think muvh off it then. The next day my hand was even worse, and it got more swollen my the minute. I went to the local medical center to check it out, just to be sure. I had a bad inflamination in my left hand and today is the first day since then that I’m off painkillers and my first day without a bandage. It’s still a little swollen and my hand shivers from time to time but I can finally cook with two hands and finally get back to my writing again. It’s been intense but now It looks like I’m good to go again. i’m not eating much these days but that doesn’t mean I can cook something for y’all and that doesn’t mean I can’t write about food.

I’m going to a music festival next weekend, I’m excited and not at the same time. I’m missing a tooth, I’m exhausted and I look like Hell. But hey! who’s complaining. It’s like when all you want to do is stay in bed in Pj’s bingewatching movies all weekend but you have to go out and about all weekend. The the week after that I’m going on a “vacation” to an Island. Not revealing where I’m going until the day arrives. Two hints I can give you is that 1. It’s in Europe, 2. I’ve been there four times before. I said something about me vlogging about my trip to New York, Sadly I didn’t do that. But I will be vlogging everyday of my two weeks vacation on the Isaland. It’s not a foodie-related trip, it’s more like a relax by the pool go out for drinks in the evening kinda vacation. I have no idea how this vlog thing will work out but I will try my best and I will be posting a lot from when I wake up until I go to bed on Snapchat and instagram. I’m also planning on going on Live on Insta, maybe even facebook.

I have planned everything and nothing at the same time, it’s a little confusing. But I’ve planned every sort of what I’m doing on social media but not what I’m actually doing on my vacation. Make sense? no, but yet yes..

I’m not eating these days as I said before and today is the day I’m supposed to plan what to have for dinner all of next week. I’m working on my book Tuesday to Thursday. Tomorrow my hair stylist is coming over to fix my hair for the event this weekend, and then a friend of mine is staying at my apartment next weekend to watch the dogs while I’m at the festival. This upcoming week though I’m going to share some of my childhood food memories with y’all and I’m super excited about it.

Europe’s Largest Theme park !

Hey everyone!

Let’s start with why I didn’t post anything as planned yesterday. I suddenly went to visit Europs largest theme park in Sweden.

I was about to go to sleep late Monday night. I was preping for a long day of writing the next day. Then I got a call from two of my friends, Belle and Mathilde. They told me that I needed to get up earily the next day because they’d planned that we were going to go to Europs largest theme park called Liseberg in Goteborg. At first I was a little stunned, I was exhausted and wasn’t really sure going was the best thing to do. But they convinced me it would be great and off we went. I slept 2 and a half hours, I woke up with a fever and I was exhausted from my infection, but I had some breakfast, went for a long walk with the dogs by first dawn, and I pused myself to be happy and put a smile on my face even though I wasn’t feeling too good.

They picked me up and we had so much fun driving to the park, and when we got there it was packed with people and that was only half an hour after the park opened. We stood in line for 2 hours to take europs longest roller coaster, it was fun, horrible and it sceread me to death to be honest all in one. I’m glad I decided to take it, but I’m not taking it again I think. By the time we were done with our first rollercoaster, Belle and Mathilde went off to take some other rides while I was relaxing on a bench in the shadows. I had gotten a rash on my face, and my fever was all over the place. I went ona couple of more rides and we had so much fun, and when they took several other attractions I was safe and sound on the ground on my bench in the shadows where I happened to meet two amazing Swedish ladies whom was just as afraid as I was, and they loved the bench in the shadows as well. So there we where sitting on the bench in the shadows, watching all kinds of people walking by, looking at life, talkimg about life and it was very relaxing and a paradise in the heat for sure.

Later Belle, Mathilde and me went to eat burgers at a burgershop called Max. I orderd a Liseberg burger without lettuce and without bacon. The burger itself was kind good, but the place itself was unclean, dirty and not very delicate. There was trash on the floor, straws, fries, napkins etc, and the A/C was dripping into Belle’s head several times. So the food was good and the place was dirty. If there where to be a heath inspection the shop would be closed. I guess so would the bathroom facilities as well for that matter . But all inn all we all had an amazing day together. Three good friends on a road trip to Europe’s largest Theme Park. I love my two good friends to bits and I’m raising my glass of Coke. Even though I was sick, and the fever was killing me I had an amazing time and I’m so greateful that they brought me with them on this trip.

I’m not feeling too good, so I’m going to go to bed early today and hopefully I will feel better in the morning. My tip of the day .. Don’t eat plumms.

Exploring the island comunity’s grocery stores!

Hey everyone!

Today I went exploring in a “new” ( it’s new to me, but not the comunity.) grocery store. It was on a different island though, there is like under 4000 people living here in this island comunity, and the island comunity is combind by different islands .. sort of. It’s complicated to explain but basically that’s about it. Anyway, so I went exploring.

This particular grocery store was the same brand as the one down the road from where I live, but it was way, way bigger. Basically I had no grocery list, so I sort of went with what I got. But the store was so big, and there was so much of everything that I went completly blinded by all the groceries. I ended up buying a couple of things, cake included. I will defently go back there, but next time I will for sure have a grocery list with me so I know what to look for and what to buy.

Always when I’m visiting a new grocery store I get all confused because there is so much new and the layout is different than what I’m used to so I either don’t find anything I’m looking for, or I find more than I’m looking for. It’s not like Target but you still buy a few things that’s not on the list. Luckily I wasn’t hungry, or I woud have bought way more than I did.

The most expensive thing you can do is go into a grocery store, hungry and without a grocery list, so I always have a list with me, except for today but on the positive side I wasn’t hungry, so I saved some money on that for sure.

Going into a new and large grocery store is always fun but also a little exhausting because you can’t find the things you’re lookig for. But in general the grocery store seemed great, and I will go back one day with a list and give it a new and improved review for sure. I will put my detective googles on and see if everything is as great as they seemed at first sight. Sometimes looks can be deseving but I won’t know for sure until next time.

Back from the past.

Hey everyone!

So, I haven’t posted since 1985 by the looks of it. I’ve been struggling to deal with everything that happened in November with my mom. I’ve used the ” wrap it in a box and shove it to the back of my head” kind off technique but now I’m trying to talk about it with my friends instead. Something I’m not that comfortable doing, because I feel like a complete and utter fool. Talking about what happen is important to be able to move on, and I get that but it’s still very out of my comfort-zone and I do feel like more of a burden than anything else. I feel like I’m this sad person and I feel like everyone is thinking ” Jeez, get over it already. ” But I know that might not be the case but it feels like I’m bothering my friends by talking about it. So I was ordered to call or text my friends ( one of them, not all of them.) when I had nightmares or flashbacks. Then I did it once or twice, then I started to get the feeling that I was in the pain in the ass, even though I’d talked to my friend prior to telling her about my flashbacks etc and she was totally fine with it. but I still got this feeling that I’m a burden. I’m not the type of person who normally feels like I’m bothering anyone when talking to them but I guess I feel this way now because it’s way out of my comfort zone. But one day at a time and stay focused on my goals, do what I love and take it from there.

I just wanted to write a post explaining why I haven’t been posting anything lately and letting you know that I’m back. I’ve had a really hard time getting back to doing the things I love like writing and blogging and cooking. I have been working on a book project on my good days. But today I suddenly realized something very important, my mom would have wanted me to continue doing the things I love and she loved my stories and she loved to read by blog Hetty’s home kitchen every single day. So I’m getting back into the world of food and memories and I officially a 100% back on Hetty’s home kitchen and I’m super excited about it. Starting tomorrow a new week will begin and a new post like always will be posted here tomorrow. If there isn’t a recipe there will still always be a post about food and about life in the kitchen where memories and good food are made.

Thank you all for always reading and following me, a big thanks to all of you for always inspiring me to keep blogging and for believing in me.

Italian food in New York

Hey everyone!

It’s Friday and the weekend is here once again, time goes by like the wind these days. Today I wanted to talk about this amazing Italian Restaurant that we ended up in while I was in New York. You know New Yorker’s really knows how to cook real Italian food, just like if you where in Italy.

So, after spending the day on a bumpy bike-taxi thing in central park, we stumbled upon this great, amazing Italian restaurant just outside of the park. There was a nice doorman greeting us as we arrived, he was wearing a black suit and was a very nice and polite gentle man. As we walked in there was a double door, and as we walked in we saw the most upper class people of all time. We’re talking about 5 inch heels, Chanel dresses, and Armani suits with handmade Italian shoes to fit. I was wearing a light blue dress by no one and sneakers, on top of that I had a bag from central park zoo souvenir shop with me, with a baby lion on it. I felt a little under dressed, and way down below these people’s pay grade. But no matter how poor I must have looked the people who owned this place, the staff and everyone working there including the door man was treating me with respect, kindness, and as an equal. They where so nice and so polite and they where all truly amazing.

The menu was written in Italian with a hint of English. The music playing in the background reminded me of the weeks I once spent in Italy. We had four waiters on our table and they where all papering us up with water and wine and you name it. They where amazing, and the food? oh man, the food was so good I can still taste the amazing risotto I had that day, it was THAT good. I Can’t remember the name, but I will find out the name and I will be sure to give it to y’all as soon as I can remember it. But if you ever are in the mood for real good Italian food in New York look for this amazing Italian restaurant new Central park, if I’m not mistaken I think it was close to the plaza. So there is a clue there.

Ham and cheese pie

Hey everyone!

It’s Wednesday, I’ve been for a walk with the dogs and it’s the day after my treatment because I have my treatment on Tuesdays’s and Thursday’s. I’m a little exhausted but otherwise fine. Spending the rest of the day writing and trying to relax.

Today I¨m making a ham and cheese pie. It’s sort of half pie and half quiche. Does that make sense? It’s a quiche in a pie crust, basically. But the most important thing is not what it’s called but how it tastes. This is a great pie for lunch, brunch, dinner or even breakfast if you’d like.

ingredients:

150g Diced or sliced ham

1 Onion

200 g Grated cheese

3 Eggs

3 dl Cream

1 ts Oregano

Red chili flakes

Pepper

Pie Crust

Note: You can add any spice you prefer and like. Same goes for the filling, you can add or substitute any of the filling with whatever you might like.

Directions:

  1. preheat the oven to 400 degrees. Prep the pie crust if needed, then whisk together eggs and cream in a mixing bowl. Add the seasoning and whisk some more.
  2. Slice up the onion and add it into your pie crust with the ham. Pour the egg mixture over, sprinkle the grated cheese on top and put it into the oven for 35 minutes.

This is such an easy dish to make and it’s so easy to switch out the ham or the onions with your favorite type of meat or vegetables. Make it your own by adding what you love.

Hetty’s filled Pita bread with a twist.

Hey everyone!

It’s Tuesday, a new day, a new week and It’s a new month. It’s super early and I’m writing this post even before the day begins. Today is going to be a long day. I’ve asked for a doctors appointment because I’m feeling a little under the weather and just need to check if it’s a virus or an infection due to my chronicle diagnoses. Nothing big, but it’s going to be a long day because my doctors office is over an hour drive from where I live and I have to call my driver as soon as I know when the appointment is. So I decided to write this post as early as I possibly could.

Today’s post is all about filled pita bread with a taco seasoning twist. When my mom originally made this recipe it was without taco seasoning, but then, a little over a year ago she decided to change it up a little and some taco seasoning to get a slightly different taste on it. I love this dish a lot, with and without the taco seasoning.

Ingredients:

1 pound ground beef

1 Old el Paso taco seasoning mix

Canned corn

Canned mushrooms

Sliced and diced cucumber

Hamburger dressing

Pita bread

Directions:

  1. Heat up the Pita bread as written on the label. Drain the corn and the mushrooms before adding them into a mixing bowl.
  2. Cook the ground beef in some butter in a skillet until no longer pink. Add in the taco seasoning and add water as written on the label.
  3. Slice and dice up the cucumber and add it into the mixing bowl. When the ground beef is ready add it into the mixing bowl and blend it well with the vegetables.
  4. Add inn as much or as little hamburger dressing as you like and mix it all well together and sprinkle some cheese on top. Cut of the top of the pita bread and stuff the pita with the filling.

This is so easy to make and it has a lot of flavor. You can easily switch out any ingredient you want and make it into your own.

Hetty’s back from New York.



Hey everyone!

I’m back from my trip to New York, Just got in the day before yesterday. It’s been an experience for life for sure. Though, I haven’t been feeling too good the past couple of weeks, I’ve had trouble eating because even the thought of food have made me sick. All of this mostly having to do with some problems regarding my medications. But I’m truly feeling better and I’m back on my medications for nausea and dizziness and I’m feeling a lot better. But because food was a problem for me while I was in new York I sadly didn’t get the chance to go to all the amazing food/farmers markets and anything food related. It was hard for me because I love food, and I love to blog about food, so to take a step back from anything food related was not easy.

But as I said, I’m feeling better, and next time I’m going to my doctors office I will talk to him about my heart going nuts when flying etc. Yes, I’ve had some problems with my heart rhythm while I was traveling, but I didn’t want to see a doctor while I was in New York , simply because I was afraid that I couldn’t fly back home so I decided not to. But I have decided to see my doctor and talk to him about it next time I’m there.

It’s been an amazing vacation even though I’ve had some health problems. WE made the best of it, and we got to see and experience a lot in only a 14 days period of time.

Back to blogging, writing and my everyday life, today it’s raining, I’ve been for a walk with the dogs and they love the rain. Well, Stella does, Cita don’t like the rain as much. On my scheduled today is planning this weeks blog posts and recipes.

The thing about being sick all the time is that you can’t really plan what to do or what to eat because you never know how you are going to feel in the morning. But I’m planning on having a backup post plan for the days I’m not feeling well.

Easter with Hetty



Hey everyone!

I have a lot to tell y’all and I don’t really know where to even begin. My life has been a mess these days, my treatment has made me extremely exhausted and all I’ve done for the past week or so is wake up, let the dogs out, eat breakfast, go for a long walk with the dogs and then go home — sleep, play with the dogs, out with the dogs again before dinner and then on an off sleeping in between. But yesterday I had sort of a wake up call. After a lot of crying, ( It comes and goes.. because of my mom and all.) I talked to a couple of friends of mine on the phone and they said something to me that really made me open up my eyes. They said, ad I quote ” You are good enough, you can do this – I know you can. You love to cook and to write so do what you are good at, do what makes you really happy. Start cooking again and start writing again because I know you can and I know you’re good at it, so get back into the game.”

I really needed to hear that, and It gave me not only inspiration but also felt that they were right, I do love to cook and I do love to write so I should do that, because it makes me happy and I know I’m good at it. Make the best of life, no matter what happens and no matter what situation you are in there is always room for positive thinking and hard work does pay off so keep working to reach your goals because I know you can, so do it — GO chase that dream of yours and make yourself proud and show everyone who didn’t belived in you that you can do this, and prove them wrong but most importantly make yourself proud.

‘I got some amazing news to share with y’all. In May I’m going on a food trip/ B-day trip/ writing trip to *Drum roll* New York, while in New York I’ve planned a small weekend trip to New Orleans as well. I’m excited, I will be blogging about everything, everything food related goes on here, and everything non-food related will apear on “My life blog?” I don’t know what to call it, but I will be linking every post to one another, meaning that I will be posting a link down below on my posts here to the other blog and vice versa. That way the followers I have there get to click on a link to read and see about the food here and all of you get to read and see all about my life on the other blog.

I will also be vlogging about my trip, so I’m opening up a you tube Chanel and I will be uploading a video every day from my trip.

Easter is coming up and my aunt Liv is coming over on Thursday and she will be staying here over weekend. Finding out what to serve for dinner was tricky and I asked her for ideas something I shouldn’t have because she was planning and organizing everything before I could get a word in. I sent her a kind and polite text after words and told her what I’m serving this Easter. I just had to put my foot down and say Hey! My way or the high way! just kidding, but I told her what I will be serving, in the end she was thrilled so I guess that’s good.

I have to get the whole apartment ready for Easter and my vacuum-cleaner is not working as it’s supposed to so I have to buy one and I can’t do that until Wednesday so I will probably be cleaning the house until 2 in the morning. I will be cleaning the guest room on Monday so I don’t have to think about that. The on Sunday, this Sunday I will be decorating for Easter and I’m actually really excited about it.

On Easter Eve we will be six at the dining table, I only have two chairs but that’s a whole another story. I will be buying four more on Wednesday. But I will have guests coming over on Easter Eve. Bell, her boyfriend Frank, her mom Catherine and her Grandmother. Then of course there is me and my aunt. I’m truth be told terrified of screwing everything up. I have guests coming over and there is no time what so ever to make a mistake, all the stores are closed and if I screw up there will be NO dinner to serve at all. That itself scares me. It’s like I’m going on an episode of Master chef, Top chef or chopped or something. I’m decorating the table the night before so everything is ready and all I need to do is focus on the food. I will place my aunt on the couch in front of the TV so that I can have the kitchen all to myself, then I will say a prayer before beginning my mission of making roasted ham with side dishes as Easter dinner this year. Wish me luck, because I need all the luck I can get. I will be making a roasted ham on this Sunday as well as sort of a practice base so to speak, test the ground or something so that I know what I’m dealing with.

Saturday kitchen talk with Hetty.

Hey everyone!

Tonight I’m taking a small break from writing to go to the movies with my friend Belle. I’m invited over for dinner at Belle and Frank’s place for dinner. Belle is one of my best friends, and Frank is her boyfriend for many years.

Belle and I are going to watch the re-make of the famous Stephen king movie and book ; Pet sematary. It might not be the right choice of movie for me today, considering everything that has happened the past few months, but I’m going to give it a go anyway. I will not let the fear of being afraid stop me from seeing this movie even though it might not be a good idea. The move premiered yesterday so I’m not going to the movie premier or anything, simply just a casual Saturday night at the movies with good friends.

This was completely a non food related post, but at least it was a post. Tomorrow I’m planning on making a roasted ham, not sure how that will turn out but you never know until you try. I’m planing on using a good marinade/glaze and hopefully it will taste great and if not then at least I get to blog about how not to do it.

Greek Salad is the best

Hey everyone!

Turns out going down town window shopping while having a respiratory infection is not a good idea. The result being that I\m totally exhausted and all I want to do is sleep but I have to stay a awake a little bit longer, I still have a lot of writing to do before I call it a night. Yesterday’s Tuna salad sandwich project went down the drain because it was too painful to eat. Today I decided to make moussaka from a dinner kit, with a Greek salad and garlic bread on the side. ‘

It still hurts like hell when I’m eating, but the moussaka turned out great, the Greek salad was amazing and the garlic bread was burnt. But all in all it was good meal after an exhausting day. Today I’m giving you my favorite recipe on a Greek salad. What I love about a good Greek salad is that you can serve it as a side dish to any dish you ever make, It’s perfect with chicken, pork, casseroles, Beef, BBQ, you name it. You can also make it as a lunch, or brunch even it’s perfect any time of the day, any day of the week.

Simply through together a couple of tomatoes, half a cucumber, some feta cheese and some slices of red onion, you can even add inn some slices of green bell pepper if you like to. The key to a good Greek Salad is to use fresh ingredients, peel the cucumber so that it obsorbes all the flavors of your dressing.

Dressing Ingredients:

Dried Basil

Dried Oregano

Pepper

Red Chili flakes

Salt

EVOO

A few drops of fresh lemon juice

Directions:

Mix everything together in a small bowl or use a mortar and pestle to mix it all together in.

It’s so simple to make an amazing Greek salad.

Hetty’s mid week food update!

Hey everyone!

I finally got my internet back, kind off. Basically I have such poor internet connection that my smart TV don’t work, I barely have any WIFI connection on my cell phone and the 4G is not very cooperative either. So, that is why I haven’t been able to post anything from my phone or my computer lately. I’m trying to fix the issue, but it might take some time. Today on the other hand I do have a bar or two, so I’m able to finally write a post. I’ve gone nuts not being able to post anything. Every time I say “I’m back, and I’m here to stay” there is always something that goes wrong. So even though that statement is true, I will not say it out loud again.

If my internet connection is stable this week I will be able to post some awesome recipes and posts this week. I’m really excited about it, and hopefully I will have enough internet connection to be able to write a post every day. I’m trying to fix the problem and the guy who is supposed to fix the internet is coming but I don’t know when. If it get’s worse I will talk to my land lord and see if he knows a few tricks on how to get it to work in the mean time.

Over to the kitchen we go, and this week I have a few tricks and tips up my sleeves. I’m having a sandwich night, I’m making a garlic baguette and I will be making a spring stew. On top of that I’m making a Greek salad and I’ll be giving you a few tips on how you can improve your moussaka dinner kit majorly.

Quick dinner idea for any day of the week by Hetty

Hey everyone!

I love a quick and easy dinner, I do love to cook for hours as well. But when I’m intensively writing I need something quick and easy , because I want to get back to writing asap. These days i’m writing a lot, and it takes up most of my day and at the end of the day I need a good meal to keep going. That’s why today’s dish is exactly that, easy to make and incredibly tasty and it’s pretty quick as well.

As you all might know I tend to plan my weekly dinners at Sundays, so I know every week what to eat. The great thing about that is that I know what to eat the next day for dinner. This gives me an advantage because I can prep a meal the night before which makes it so much easier the next day. Today I had Chicken filet that I marinated the night before( The recipe for the marinade will be written at the bottom of the post.

First off I pre-heated the oven to about 400 degrees, while waiting on the oven to get all heated I use an Iron skillet added some butter and added the chicken to give it some color before putting it into a casserole dish and put it in the oven for about 20-30 minutes. While the chicken was in the oven, I sliced up some mushrooms and zucchini and added them into another iron skillet with some butter, Italian seasoning, salt and pepper until they where almost caramelized. I boiled some rice, and served it all up with some chicken sauce I found at the grocery store.

Normally I would teach myself how to make the perfect sauce for chicken but since I was in a hurry to get back to my writing this would have to do for now. It’s an easy chicken fillet dish that is suitable for any night of the week, weekdays as well as the weekend. I really recommend trying it if you haven’t already. IT might seem a little boring, but believe me when I say that the result is really good and perfect when you’re in a hurry. You can easily switch out the vegetables with your favorite vegetables, or make your own marinade, but this is so easy to make and fun as well. Personally I needed something easy for a change. I have some problems with eating lately so I needed something that was easy to make, looked good and tasted great. This was the perfect alternative.

Marinade recipe:

2-2 TBS EVOO

1 TBS Balsamic vinegar

The juice of half a lemon

1 TBS Honey

Salt

Pepper

Red chili falkes

Italian seasoning

Mix together EVOO, balsamic vinegar, the juice of half a lemon, Worcestershire sauce, honey, salt, pepper, red chili flakes and Italian seasoning blend in a zipper bag. Add in the meat and mix it all well together.

Monday-Tuesday weekly food update!

Hey everyone!

One day late, I went out yesterday to do some grocery shopping and ended up eating at this little cool cafe-like restaurant, it was an Asian buffet, and it had a medium variety of different Asian dishes. It was actually pretty good and when I got home I had a cup of coffee before heading to bed. It was a long day even though it doesn’t sound like it.

I’m excited about this weeks posts as I said on Sunday. There are a medium variety of dishes, recipes, restaurant reviews and more coming up this week. Starting tomorrow I will be presenting a simple chicken fillet dish that is perfect for any day of the week. On Thursday I’m making brownies with a chocolate cream cheese frosting and coming up on Friday is a Red velvet cake mix from Betty Crocker, that could be interesting. Never tried that before so that could be fun. I’m also using a Betty Crocker icing so wish me good luck. Sometimes i think it’s easier to make everything from scratch then to use cake mixes and pre-made icing. Which makes this a bit of a challange for me, but I love a good challenge so this should be fun. The cake i for Chris’s Birthday so hopefully it looks great when it’s done.

Then on Saturday I will be posting a restaurant review of a Greek restaurant down-town called Knossos. Sunday’s post will be posted on Monday as “Chris’s Birthday weekend” post. My best friend Chris is coming over on Friday and he’s staying until Monday. He turns 29 on Thursday so we will be celebrating all weekend.

Dinner today is just a fish dish that I’m just going to throw in the oven and serve with boiled potatoes, carrots and melted butter with chopped chives. It’s not something I’m going to make from scratch so I’m not going to write about it, but I will be posting a photo of it on Instagram later on today, so if you want to see how it all turned out simply just follow me on Instagram Henriette9090 – looking forward to see y’all on Instagram.

A small update is that I might be going to the New York and New Orleans in May to blog about the food culture, a variety of food trucks, food markets, I will also be going there in hope of getting a meeting with a publishing agent for my book. I will on top of all this be celebrating my birthday in New York this year. It will be a writing/blogging/birthday celebrating trip. I will also try to squeeze in some adventures as well, hopefully I will get to visit six flags, the empire state building and more.

Hetty’s recipe testing disaster.

Hey everyone!

Yesterday I tried to make figs filled with blue cheese wrapped in Bacon. I tried it several times, all day. It looks so simple. so easy; you just cut the figs sideways half way through, take out the stone, fill it with blue chesse, clsoe it wrap it with bacon and into the oven it goes. Yes, it sounds simple, but then you put it in the oven as written in the recipe, it smells good and it looked god the minute you put them into the oven. You wait, you take them out of the oven and it’s not only a mess but it taste horrible as well. I was in the mood to succeed. I tried several times because I was determinant to make it work, to make it perfect. But every time they came out horrible to look at and horrible in taste. After several tries I decided to give up for the day. I’m not giving up permanently but only for a while.

I fail a lot in the kitchen as everyone else, I try a hundred times before getting it right.Sometimes I’m lucky and I succeed at first try. But this week I’ve failed in every single dish I’ve tried to make this week. It makes me nuts, but I’m still hopeful and next weeks posts will be great. Some new recipes, a restaurant review and more so I’m pretty excited about that. This week has been sort of a mess, and I’ve not been able to blog every day because I’ve been too busy trying to perfect recipes that no matter what I did ended up as a disaster. Next week I will only be posting recipes I have perfected previously but I haven’t posted yet. That sort of gives me a calm feeling that next weeks post will come out everyday and I won’t stress about getting them to work because I’ve made it at least once before so I know what to do and what not to do. I’m sure they can be perfected even more but they are perfect enough to post at least.

Baking Sunday today, also turned into a no-show because confused Hetty manage to forget to buy heavy cream which was sort of a main ingredient in “Today’s” brownies. I will be making brownies soon, just not today due to the missing ingredient.

WOW! Kitchen disaster 101.

Hey everyone!

I don’t even know where to begin. For two days now, I’ve been trying to make moussaka from scratch. On Wednesday I was missing milk which is an important ingredient when making moussaka. Then off I went down town to buy some milk and ended up eating at this amazing Greek restaurant down at the pier. Then, yesterday — confident and all I dived into the recipe I was given by a family member; this was happening — “Today was the day I would make moussaka from scratch and succeed.” Well, the truth is I didn’t. Succeed that is. Everything looked really good and tasted really good along the way. I put it all together as the recipe said, and in the oven it went for about 45 minutes. After 45 minutes, I took it out and it was different. It turned out to be a liquid-ish lasagna with eggplant. IT actually tasted really good but it was wired to eat it and even though it tasted good it looked horrible and I spent 5 hours in the kitchen trying to make it work. Let’s just say that I will try this another time, but not in the near future. -maybe this fall or something. I’m far from giving up but for now i’m sticking to the moussaka dinner kit that I personally improve to make it amazing.

Today I was planning on making pasta carbonara sauce form scratch, but yesterday put some sort of fear of failing in me so i’m going for a safe alternative today. Chicken fillet with oven potatoes, mushrooms and Zucchini. Simple, a little boring but tasty and delish at the same time. I’ve made today dinner countless of times and blogged about it even more I’m sure. So I’m not posting it again today. But if you want me to re-post the recipe, send me an e-mail marked with Hetty’s chicken fillet and I will re-post it.

Hetty is back with new recipes this week.

Hey everyone!

Wow, it’s been a long time since I last wrote. I’ve been feeling a little under the weather lately and I haven’t eaten much since the last time I posted. But I’m all better now and finally ready to get to work in my new kitchen in my new apartment and I’m over the moon excited about it. I’ve decided to really go for it this week. I have a bunch of new recipes coming up and most of them, if not all of them are recipes I’ve never even tried before. these recipes are a mix of family recipes, my own creations and ideas from all of you. So I’m happy, a little nervous and positive about this weeks posts and recipes. It can go two ways, either it tastes amazing or I mess it all up and it becomes a post of how to make the dish. Either way I’m very excited to get started and to get back into the game.

As many of you might know I have a immunodeficiency disease called Hypogammaglobulinemia. It’s a long complicated diagnose. Basically it means I’m sick a lot, and sometimes that affects my writing but I try to do my best to write a post every day, even on the bad days when I don’t get to cook. But ‘m hopeful that this week I will be fine and I will be able to cook and write all week. Do you want to know what’s on the menu this week? Well, you’re in luck, here is this weeks menu on Hetty’s home kitchen;

Hey everyone!

I’ve finally moved into my new apartment and for a little over a week now I’ve been unpacking everything, my new apartment is great and it looks more like home then it did a week ago when all we did was dive in cardboard boxes. I’s been a tough road, but I think that in the long run this was the right thing to do.

I now live on an Island in a safe neighborhood, and all the neighbors are so helpful and amazing people. Everyone helps everyone and they are all just super nice and I love that more than anything.

I’m finally back on Hetty’s home kitchen and I’m super excited about it. I’m currently working on new recipes to share with y’all and I will be posting video clips of some of my videos on YouTube this upcoming spring. Something I’m really excited about as well. There are a ton of new things coming up this spring that y’all can look forward to for sure.

I thought my kitchen was a little small due to my passion for cooking and my food blog so I decided to buy a kitchen island to go with the kitchen. I have so much space now and I’m super excited about that. It took me a while to get it set up but I love it. It’s Amazing with a capital A. Tonight I’m going to work on a variety of recipes and we will see how that goes.

Hetty’s improved tortellini tip. Re-post by request.

Hey everyone!

It’s taco-Tuesday, but I’m jumping in with my improved Tortellini dinner tip idea just in time for Wednesday. This is a re-post by request I hope you enjoy.

I love how you can transform something so simple into something so delicious. Not all of us have a degree in pasta making, so most of us buy pasta in the store including tortellini. So this is to all the people out there in the world who buy their tortellini fresh at the grocery store.

Ingredients:

1 pack of your favorite tortellini( I used the one that’s stuffed with sun-dried tomatoes. )

Butter

Olive oil

Pepper

Grated cheese

( Sun-dried tomatoes, but only if the tortellini is not stuffed with it.)

Directions:

  1. Boil the Tortellini as written on the package.
  2. Put some butter and Olive oil into a skillet on high heat.
  3. When the tortellini is done boiling, drain the water.
  4. When the butter has melted, add in the tortellini and turn the heat down to low.
  5. after about 2 minutes in the pan add in the grated cheese and season with pepper.
  6. The dish is one when the cheese has started to melt. Serve it up right away.

I love how something so easy can taste so good. This is our family recipe on how to improve a tortellini dish from boring to super tasty in no time. If you would like to add the sun-dried tomatoes in you can do that at the same time you add in the grated cheese.

The food culture in San Diego

Hey everyone!

It’s Monday, a new day and a new week. Today’s city is *Drumroll* San Diego. Do you love Mexican and Asian food? Then San Diego is THE place to be. San Diego is also big on BBQ which I love.

Double bacon cheeseburger and carne asada fries are only two of hundreds of amazing dishes to try when you go to San Diego. In the mood for something sweet and delish? Then Acai bowl is exactly what you need to order. Acai bowl is a smoothie Ice cream kind of dish originated from Brazil and for sure something I will try if I’m ever in San Diego. you can easily find it walking amongst the many juice bars etc in town.

California burrito, if you love burritos as much as me then this is definitely something worth trying while staying in San Diego. Yodel, something I would love to try one day, I’m slightly allergic to hazelnuts. I only get a rash, I don’t die but still, it’s something I avoid eating if possible because I look like a lobster color wise. But Yodel looks amazing and I would love to try it if I could.

Another delish dish to eat when you’re in San Diego is bacon wrapped dates. I tried this a year ago when I was at a new years eve party and it’s to die for. The salty bacon mixed with the sweetness of the dates is so good it can’t even be described. That right there is foodgasm for sure.

You can even enjoy true Italian Gelato( Ice cream) right there in San Diego, Pappalecco is the place to go, they make their gelato on site and they always make sure you get the best, fresh Italian Ice cream there is. If you love ice cream as much as I do, and especially Italian Ice cream Pappalecco is the place to go.

Sometimes simplicity is the way to go, The most normal hamburger you could ever think about. Burger, cheese, lettuce, tomatoes, onions, sesame seed buns, and mayo. Yet is the best burger you’ve ever had if we are to believe the rumors. You can get this burger at The Lodge at Torry Pines.

We’re not done quite yet, there is still one more thing you absolutely need to try before leaving San Diego and that is the Tripple Threat Prok Sandwich. Yes, it is as you might have imagined pulled pork, bacon, and pork loin schnitzel stacked high on between to buns. The Carnitas snack shack once said — Why would you put only one kind of pork on the sandwich when you can have three? and I like the way they think.

Hetty’s improved Marinara sauce of February.

Hey everyone!

I wanted to post an easy dinner tip that could really make a difference in the kitchen. This improved marinara sauce is the best. You can easily make changes, and make it into your own — set your own twist on it. Your family, friends, and whoever comes over for dinner will for sure love it. I use this tip for a large variety of marinara sauce that I buy in our local grocery store.

Ingredients;

1 Pound ground beef

1 Jar of marinara sauce ( 590 g)

1 Clove garlic

1 Shalott

Grated nutmeg

Salt

Pepper

Italian seasoning

Red chili flakes

200 g Fresh Mushrooms

Pasta of your choice

Butter

Directions:

  1. Use a paper towel to remove any dirt from the mushrooms before slicing them up. Put some butter into an iron frying pan and add the mushrooms. Season with salt and pepper. Don’t overload the frying pan, brown the mushrooms in several rounds.
  2. When all the mushrooms are done, add them on a plate and put it aside for now. Add some butter into the same frying pan. While waiting on the butter to melt; clean and chop up the shallot and clean the garlic. When the butter has melted add in the chopped shallot and grated garlic. Season with salt, pepper, and grated nutmeg. let it simmer for about a minute before adding in the ground beef. Start pepping the pasta of your choice as written on the label.
  3. Let the ground beef cook until it’s golden brown, season with Italian seasoning, pepper, and red chili flakes.
  4. When the ground beef is cooked, add in the mushrooms and let it simmer for about 1-2 minutes. Add in the marinara sauce of your choice and let it simmer for about 5 minutes. When the pasta of your choice is cooked, drain the water and add it into a serving bowl, add the meat-sauce-marinara-sauce over and gently blend it all well together. Sprinkle some parmesan cheese on top before serving.

I hope you love this as much as I do, I use this recipe every week and it’s so good. One of my favorites is to use this tip with a creamy cheddar marinara sauce, but I also use regular marinara sauce. I love that I can use this “recipe” to any marinara sauce I’ve ever tried and it always turns out great. You can also use a spice called All around that I use a lot, also in this dish but if you can’t get a hold of it I can send you some. It’s a mix of a variety of spices. I will be posting a post about this particular spice soon. It’s easy to create on your own as well I believe. I will dive deeper into the ingredients in this spice and I will write a post about it.

Hetty’s January Marinade

Hey everyone!

So, the other day I had forgotten all about dinner, and I had no idea what to have for dinner. I had some pork tenderloin in the fridge and I decided to marinate the meat, I had some frozen oven roasted potatoes and vegetables that I heated up in the oven before mixing everything together and it actually turned out really great and I’m for sure making it again. Sometimes you simply create great dishes out of the blue when you, in fact, have no idea if it’s going to turn out great or horrible. Luckily for me this time it turned out pretty amazing. That’s part of what I love about cooking, that you can just use what you have and make the best with what you have.

Ingredient:

1 pound of sliced pork

Oven roasted potatoes and vegetable mix ( frozen – heat up in the oven.)

1 TBS Balsamic vinegar

1/2 Lemon

1 TBS Worcestershire sauce

Salt

Pepper

1 TBS Honey

2-3 TBS EVOO

Italian seasoning blend

Red chili flakes

Directions:

  1. Mix together EVOO, balsamic vinegar, the juice of half a lemon, Worcestershire sauce, honey, salt, pepper, red chili flakes and Italian seasoning blend in a zipper bag. Add in the meat and mix it all well together.
  2. Put your frozen oven roasted potatoes and vegetables in the oven and follow the instructions written on the label.
  3. Add some butter and EVOO into a frying pan. When the butter has melted add in the meat. Let it cook until it reaches a golden color and the meat is cooked all the way thorugh.
  4. When the meat and the potato/vegetables are ready, mix it all well together. Let the potatoes and vegetable rest for about five minutes before blending it together with the meat. Serve the dish with a sauce of your choice.

This was something I just threw together, and you can switch out the meat or the potatoes/vegetables with whatever you prefer and easily make it your own. It’s so easy to make and it’s incredibly tasty, so worth it.

Hetty’s Tuesday breakfast tip!

Hey everyone!

I’m excited about a new week, I know that this week and the next will bring on a ton if not more challenges but I will do my best to face them with positivity and do my best to solve it; in the best way possible. I feel like I will come out stronger, working hard to reach your goal no matter what life throws at you. It’s not easy, nor will it ever be but you gotta do the best you can with the cards you are given.

Today’s topic on Hetty’s home kitchen is how you can make the best breakfast ever with some ham and cheese and a quick trip to your local bakery the day before. From time to time I have cravings for something different for breakfast than what I eat on an every-day basis. Croissants with ham and cheese are like the best thing ever, yet it’s really intense for me sometimes which is why I don’t eat it as much as I might want to. But I do eat it as I said, once in a while and it’s really delish and so easy to prepare.

2 Fresh Croissants

2 Slices of ham

2-4 Slices of cheese (depending on size and preference.)

Directions:

  1. Cut the Croissants in half lengthwise, add a thin layer of butter on each half.
  2. Add one slice of ham on each of the bottom halves, then add the slices of cheese on top.
  3. Put the top half on top, put it on a plate before putting it into the microwave for about 1-2 minutes, or until the cheese has started to melt.

Hetty’s Tuesday movie night

Hey everyone!

Tuesday, sometimes you just need a movie night after a long day. That’s exactly what I’m doing today. Curling up in bed watching my favorite movies on Netflix and simply relax. Speaking of movie nights; what’s your favorite movie snack?

My favorite movie snack depends on where I’m watching the movie, to be honest. If I’m going to the movies I normally buy popcorn, skittles and milk dots. That way I get the sourness from the skittles, the salty warm popcorn, and sweetness from the milk dots. A perfect combination of everything. But if I’m watching a long movie I usually buy a little more.

When I’m at home I normally go for Doritos or maybe some M&M’s or popcorn. It sort of depends on what mood I’m in and it depends on what I have laying around the cabinets. today I’m going for popcorn. Plain and simple, but yet so good and perfect for a movie night on a Tuesday. I don’t have snacks every time I watch a movie though.

Hetty’s Chicken diner tip of the week!

Hey everyone!

Sunday fun day, and today is no different. On Hetty’s kitchen today you will get some tips about a perfect Sunday dinner if you’re dining with family, friends or alone. This dish is great either way. Grab a cup of coffee and sit down for a bit, while reading today’s dinner tip.

Chicken fillet is something I cook a lot, it’s perfect when you’re dining alone, or if you’re having guests over for dinner. It’s so easy and so delish that you would want to make it every day of the week.

1 chicken fillet

Rice

Butter

vegetables of your choice

Sauce of your choice ( optional.)

Your favorite seasoning blend

Salt

How to make a delish Chicken fillet dinner without even thinking about it;

  1. Preheat the oven to 425 degrees. Season your chicken with you favorite seasoning blend. ( I used a Chicken & Stake seasoning mix.) Add some butter into an iron skillet. When the butter has melted add in the Chicken and let it get a golden color on each side before adding it into a casserole dish.
  2. When the oven is ready put in the chicken and let it cook for about 3 0 minutes. While the chicken is in the oven cook the rice and your vegetables as you please. When the rice is done, drained and put into a serving bowl; add in a tablespoon of butter. IT lifts the taste of the rice up sky high and it makes sure the rice doesn’t get sticky. If you’re planning on serving your dish with a sauce make sure to time to when the chicken is done.
  3. When the chicken is ready to add it to a serving plate and put it on the table with your rice, vegetables, and sauce of choice.

This is a super easy dinner tip that is perfect for any night of the week. During the summer you can easily switch out the rice with potato salad and the vegetables with a nice salad on the side. It’s so easy to customize this dish after whichever season or whether you’re cooking in.

I cook this dish in so many different ways all year around and I never get tired of it. It’s dish filled with flavors no matter the season. I hope you lvoe this as much as I do.

Hetty’s Pork burrito/wrap!

Hey everyone!

Saturday is upon us and it’s time for a new recipe, and I think you’re going to love this one. It was one of those types of recipes where I just mixed together something I had laying around in the kitchen cabinets and even though I had no expectation it ended up tasting really good and I would l couldn’t wait to share it with all of you.

This recipe is super easy to make and it has a lot of flavors as well. It’s perfect to serve any night of the week and perfect if you like burritos.

What you will need:

1 Pound sliced pork

Rice

Frozen vegetable mix ( I used birds eye classic mixed vegetables.)

Marinade of your choice ( I bough a random marinade at the local grocery store.)

Tortilla wraps

Salt

Pepper

Sour cream

Salsa

Grated cheese

Butter

EVOO

How to make Hetty’s Pork burrito/wrap;

  1. Add a dash of butter and some EVOO in an iron frying pan. Put the sliced pork in a bowl and pour over your marinade and mix it gently together with your hands. Then when the butter has melted add in the sliced pork. Season with salt and pepper. Cook the rice as written on the label. Put the frozen vegetables in a saute pan. With a dash o butter.
  2. When the meat is cooked and the vegetables are defrosted and warmed up add them in with the meat and mix it all well together. When the rice is done, drain the water and add it into the pan with the meat and the vegetables. Mix it all well together, don’t use to much rice, just a reasonable amount.
  3. Heat up the tortilla wraps as written on the label, then add your filling to the wraps, put a tablespoon or teaspoon of sour cream and salsa before topping it all off with grated cheese. Wrap it up and you’re good to go. You can also serve the leftover sour cream and salsa on the side so people can use it to dip their wrap in as well.

Another way to serve this is to put the filling, wraps, sour cream, salsa and grated cheese on the table so people can take as little or as much as they want.

I hope you love this recipe as much as I did, it really is great eve though it might sound a little strange.

Looking for the perfect side dish that you can serve with your steak, poultry, pork, lamb you name it? Well, that’s exactly what today’s post is all about. There are hundreds of perfect side dishes out there and today’s dish is simply on of many but it’s a dish I make often, that I simply love. Not only because it’s easy to make but also because it tastes amazing and is worth making. You can also give this dish a twist by adding your own favorite vegetables with the mushrooms and the zucchini. It’s so simple and tasty, and it’s a recipe that is going to be a hit for sure.

When I’m cooking lamb, pork or stake I prefer to have a side dish that is flavorful yet not that complicated to make because I got my hands full with the meat and all. This is perfect, it doesn’t take a lot of time to make, and it goes perfect with your meat for dinner. It’s a win win if you ask me. When I say that I usually make this dish a lot I wasn’t kidding. I make it as a side dish more often than not.( When I’m having stake, chicken, turkey, pork etc.)

This recipe serves about two people, but you can easily multiply it and make as much as you want.

Ingredients;

1 Green Zucchini

250 g Mushrooms

Italian seasoning

Salt

Pepper

Red chili flakes

Butter

EVOO

How to make Hetty’s Zucchini/Mushroom side dish;

  1. Add a dash of butter and some EVOO into an Iron frying pan. Wash the zucchini then peel it, cut it in half lengthwise. Then slice it up and put it aside in a bowl. Slice up the mushrooms and add them into the pan when the butter has melted on medium/high heat.
  2. Season with Mushrooms with salt and pepper. Let it fry until the water has absorbed. (if you have any liquid left in the pan after 10 minutes, drain it. ) Add in the zucchini and let it simmer for about five minutes. Season with Italian seasoning mix and red chili flakes. ( again if there is any liquid left in the pan, drain it before adding it to a serving bowl.

It’s as easy as it sounds, and it’s for sure worth a try of you in general love or like Zucchini and mushrooms. You can also add in slices of onions etc, whatever you prefer; add it.

Hey everyone!

It’s Thursday and time for my treatment again, so I decided to make something a little extra tasty today. Sometimes you have to make something a little extra good on the not so good days you know.

In Norway they have this amazing moussaka dinner kit, and as you all know I’ve tried on numerous occasions to make moussaka from scratch and failed drastically every time. But I do love a good moussaka so I use this dinner kit to make it. I know it’s not ideal for all food enthusiasts out there to cook with a dinner kit, but this is THEE exception if you ask me. And let’s be honest here, sometimes all you want to do is make things a tiny bit more easier than cooking for three hours. What I really love about this dinner kit is that it only contains two bags, one being a spice mix and the other one being potato flakes with powdered milk or something. All you have to do is add the meat, milk, grated cheese and water. It’s easy, but if you don’t add a twist to it, and if you don’t add your own spices on top of the spice mix in the kit it will not taste good. So today I’m going to give you some tips on how to improve the moussaka dinner kit.

For this dish you use about 1 pound of ground beef, season the meat with all around spice, pepper, red chili flakes, and half a chopped shallot. When the meat is no longer pink you add inn the seasoning mix in the kit, and water as written on the package.

For the potato/milk sauce, you add the potato and powdered milk into sauce pan, add milk as written on the package and season with pepper and half a chopped shallot.

When they both are done, spray a casserole dish with a non-sticking spray. Add the meat sauce then thee potato/milk sauce on top and topp it all off with grated cheese before putting it into the oven as written on the back of the kit.

This is an easy way to spice up this dinner kit, and there are several dinner kits out there that only needs a little push to get good, you know. So go out into the world of dinner kits and kick some ass with your own seasoning. A shallot or some chili makes a whole lot of difference in a lot of different dinner kits I would believe.
