Loss of a family member

Hey everyone!

I’ve been away for some time now. It’s not without reason. My wonderful, amazing, good-hearted and beautiful mom passed away less than a week ago, last Tuesday to be exact. it was a complete shock to the whole family and ecpesially to me. The funeral is the day after tomorrow and I’m still in shock. My mom was diagnosed with cancer and died 11 days later. I still can’t believe it, I know she’s gone and that she’s not coming back but yet it feels like she’s on vacation and will walk through the door any minute.

I just wanted to take the time to post this and let y’all know that I will be back to blogging soon. I just need this week to gather all my thoughts and to try and get back on my feet. I have a lot to take care of and the economy is a big issue. I have scheduled some meetings with some people who are going to help me figure out how to deal with my economy.

I will be back before y’all know it, I just need to sort some things out first.

Hetty’s weekly post update

Hey everyone!

Monday mornings, I’m drinking my morning coffee and the sun is shining. What a great way to start a new week. The family situation is bad, but we’re all hanging in there and talking to the doctors on a regular basis, so there is that. But I’m’ positive about a new week. For those of you who don’t know; A family member that is very close to me is very sick, and for now, we don’t know why or what it is. But I refer to this whole situation as ” The family situation”  So now you now you know.

From a family update to what’s cooking this week in Hetty’s kitchen. The list of what’s for dinner this week was ready on Friday. I’m very excited about it, and I hope y’all are too. I’ll be making an omelet with pan-fried potatoes, I will be doing my best to carve a pumpkin and there will, of course, be a couple of food talk with Hetty posts as well as a ground beef pie and more. I’m very excited to get this week started, even though I’m a little worried about how I’m going to carve the pumpkin without any carving tools. But I do have a few sets of knives that might be capable of doing the job.

Sometimes I wish that I had a bigger kitchen, but then again I do love my kitchen the way it is even though it’s sort of the size of a horse shoe. Well, at least the shape is the same. We could always expand our kitchen but then again that would be pretty expensive and I kinda love our kitchen the way it is even though it’s not always so practical it could be so much worse so I’m happy we have the kitchen we have.

Coffee is something I need in the morning to function. Without coffee, I’m like a walking zombie, without the being dead part. In the every-day-life, I drink my coffee black. But from time to time when I’m near a Starbucks I’m all in for the pumpkin spiced lattes, toffee nut latte, a double ice latte with caramel etc. But I’m rarely near any Starbucks so there is that though. The thing is that it makes the craving for a good pumpkin spiced latte or a Christmas blend latte even stronger. Which tend to result in me buying a lot of coffee the few times I’m there. One time I ordered two Pumpkin spiced lattes to-go and it all ended with the second coffee being cold by the time I finished the first one. It’s wired thinking about it so I’m not going to, at least not for now.

Monday’s can be good, it can also be exhausting and annoying. Today, for me at least it’s a mix of them all. A little good, a little exhausting and a little annoying. Three in one is not so bad, not so good either but it is what it is and that’s that.

This was little Monday- Weekly-update post from my side of the kitchen. I’m signing off and looking forward to tomorrows post already. At this point I have no idea on what that will be about, maybe it’s a food talk post or maybe it’s recipe. We’ll just have to wait and see what happens, I’m looking forward to it either way.

Hetty’s Apple pie

Hey everyone!

It’s Sunday food-fun-day with Hetty, and what’s cooking today? Apple pie!I love baking on Sundays. Always fun, always smells good and a perfect end to a nice weekend.

As you might know, I’ve had my fair share of struggles with pie-dough, and the struggle is far from over. But today I used a fresh pie dough that I bought at the grocery store. I put my pie-dough struggle on hold and decided that I really wanted to bake a pie today and I realized that today was not the day to pick a fight with the pie-dough so I used the one I bought at the grocery store the other day. I had a recipe for a filling that I decided to try. This was so easy, almost too easy, but the result was great. This will not stop me from keep trying to make the perfect pie dough, but it sure will make me have a store bought pie dough as a back-up if I mess up completely. At least in some cases like for Thanksgiving and Christmas or special occations, I will have a backup dough in the fridge just in case.

I love baking on Sundays, the weather is cold, rainy with a hint of wind and the whole house smells like Apple pie, can it be any better? just wondering. ( I guess it would be better if the dough was homemade though, but still.) Today’s filling was apples, sugar, cinnamon and vanilla cream. Nothing more, nothing less.

For dinner today my mom made meatballs that she’s going to put in the freezer. But I’m using some of them for dinner today. I’m simply boiling some potatoes, making a gravy and stewed vegetables. Easy and tasty. My mom knows how to cook, she’s the best home cook in our family for sure. Her cooking is the best I’ve ever tasted and I spent 3 weeks in Tuscany one summer, still my mom’s cooking is the best. I love it when we cook together, cooking and preparing a meal with family is everything.

Apple pie filling;

3 Red apples or Granny Smith apples

2-3 TBS Sugar

2 TBS Cinnamon

0.6 oz. Vanilla cream

1 TBS Sugar and 1 TBS cinnamon for sprinkling

1 Egg ( brush the pie dough to get a golden brown color)

Directions:

  1. Follow the instructions on how to cook the pie dough written on the label. If you need to pre-cook the dough then do so. When the pie is ready for filling;
  2. Peel and clean out the center of the apples. ( I used a core remover.) Slice up the apples and add them to a mixing bowl. Add the sugar and the cinnamon and mix it well together.
  3. Spread the apples evenly around the pie, then add a layer of vanilla cream before cover the top with braided pie dough or simple stripes.  (whatever you prefer.) Brush the crust and the cover with whisked egg. Sprinkle some sugar and cinnamon on top before putting it into the oven.
  4. Let it cook in the oven for about 30 minutes on 400 degrees.

You can easily serve this up with some whipped cream or ice cream on the side. I really loved the result for this pie and I will for sure be making it again. ( with a homemade dough or the one I buy in the grocery store.)

Hetty’s spicy improved marinara sauce

Wondering what’s cooking at Hetty’s home kitchen today? well, let me tell you all about it in a second.

Today I made pasta with a twist. The thing about pasta is that it’s so easy to make so incredibly good to eat. I love pasta, and sometimes I make the meat-sauce from scratch and sometimes I spice up and improve a glass of marinara sauce from the store and add ground beef. It’s so easy to improve a marinara sauce, and there are a hundred ways to do it. Today I’m going to give you some tips on how you can make a tasteless store-bought marinara sauce into a spicy and delish meat-sauce perfect for spaghetti or any type of pasta you’re in the mood for.

Ingredients:

1 Pound Ground beef

1 Jar Marinara sauce

1/2 Onion

1 Clove Garlic

1 Green chili or jalapeño

Spaghetti

Salt

Pepper

Dried red chili flakes

Italian seasoning

Extra virgin olive oil

Butter

1 teaspoon powdered beef-broth

Grated nutmeg

2 Teaspoons chopped sun-dried tomatoes

Mushrooms ( pre-cooked it a pan, or canned mushrooms — Whatever you have.)

Grated cheese

Grated Parmesan

Directions:

  1. Add some water into a medium pot and season with salt. Clean and chop up the onion and the green chili.  Pour some olive oil into a large skillet with some butter. When the butter has melted add in the onion and the chili. Season with salt, pepper, and grated nutmeg. let it simmer for about 2 minutes.
  2. Add in the ground beef, season with Italian seasoning, dried red chili flakes, and grated garlic. Let it cook until it reaches a golden brown color and it’s cooked all the way through.
  3. Add the pasta into the water when it starts to boil. Let it cook for about 8 minutes. Add the mushrooms and sun-dried tomatoes with the meat and let it simmer for about 2 minutes. Then add in the marinara sauce to the meat and mix it well together. Let it cook for five minutes. Stir in one TBS butter and some grated cheese.  When the butter has melted the pasta should be ready. Drain the pasta water and add it into a bowl, pour over the meat-sauce and gently blend it all together before serving.  Garnish with parsley or grated parmesan.

You can easily serve this dish up with some garlic bread on the side, maybe a salad if you want. This is a simple dish, that is perfect any day of the week. It’s easy, it’s spicy and it’s delicious.  I really loved this spicy version, and I’m for sure going to make it again.

I was supposed to have pork tenderloin for dinner today and I was looking forward to making this really good marinade, but as I realized this morning I forgot to buy it. lol

I’m binge watching Grimm on Netflix tonight with my wonderful mom. She’s hooked on Grimm and she loves it. Lucky for me because it’s one of my favorite shows.  What are y’all up to this Saturday evening? ( If there is anyone out there.lol.)

Hetty’s Taco Twist Friday.

Hey everyone!

I’ve been running errands downtown all day. The thing about not having a car is that in the end you most likely end up having to take a cab back home. On top of that I manage to forget the pack of candy. I was to send to a friend of mine in Texas. Now I won’t be able to go to the post office before next week.

I was in the mood for tacos today, but I wanted to take it to the next level, so I did. It turned out amazing, and I hope y’all like it too. It’s so easy and so tasty and so worth it.

Ingredients:

1 Green chili ( or jalapeño)

1/2 onion, diced

1 Old El Paso taco seasoning mix

Salt

Pepper

5 mushrooms

Dried red chili flakes

2 Avocados

1/2 lime( the juice of half a lime.)

2 tomatoes, diced

1/2 Clove of garlic ( grated)

Corn ( canned or fresh.)

Diced cucumber ( as much or as little as you might want.)

Sour cream

Old El Paso salsa

Grated cheese

Tortilla Wraps

EVOO

Butter

( Note: add the diced cucumber and the corn into small bowls so it’s easy to just take a spoonful into the tortilla wrap.)

Directions:

1. Preheat the oven to 400 degrees. Add some butter and a dash of EVOO into a pan. Chop up the onion and slice up the green chili. ( remove the seeds if you don’t want it to be too spicy.) when the butter has melted add the onion and the chili into the pan. Season with salt and pepper. Let it cook for about 2 minutes.

2. Slice up the mushrooms and put them into another pan with EVOO and butter. Season with salt, pepper and dried red chili flakes. Let it cook for 5-10 minutes on medium heat.

3. Add in the ground beef with the onion and the chili. Let it cook until it’s golden brown. When the meat is cooked, add in the Old El Paso taco seasoning mix and add as much water as written on the label.

4. Wash the tomatoes, dice them and add them into a bowl, add inn the juice of half a life, half a grated garlic, salt, pepper, dried red chili flakes. Then clean the avocado before adding it into the mix. Use a fork to gently mix it all together.

5. Use a pastry brush to brush a casserole dish with EVOO. Put a tortilla wrap on a plate, fill it with the meat, the mushrooms, corn, diced cucumber, guacamole, grated cheese and salsa. Wrap it together and put it into the casserole dish. Let it cook in the oven for 10’minutes. Serve it up with some sour cream on the side.

Hetty’s Wednesday; The Hagen Sandwich

It’s Wednesday, Humpday, mid-week and I’m actually really excited about it. Every day is a gift and we should embrace every day with joy or at least be as positive as possible. sometimes we all go through difficult time periods in our life. Somehow, it will be all be ok one day. Maybe you’re having a hard day today, maybe you’re going through a heartbreak, the loss of a friend or a family member, or maybe you just lost your job. No matter what happens to us, with time we get through it. It’s not always easy, most of the time it’s hard, it’s horrible to even and even though at the time we don’t see the light at the end of the tunnel things have a way of working itself out in the end. The most important thing to do is to get out of bed every morning no matter how bad you feel, eat something, anything. If possible, get a dog and go for long walks, or go to the dog park. Do this every day and you will get through it somehow.

Well, that was my Wednesday – humpday, pep-talk. The kitchen is not only used for cooking but also a glass of wine and deep conversations, laughing, crying, talking about life and everything in between. But from talking to cooking, today’s recipe is a grilled ham and cheese sandwich with garlic butter. This is something I haven’t made in forever. I forgot all about it, then suddenly I stumbled over the recipe I got from a really good friend of mine, a really long time ago. We’re still good friends and I’m really excited about sharing this recipe with all of you. It’s super easy, and it’s so, so good. Good food at any time of the day is great, and even better when you can share it with family and friends.

It’s October, and I’ve already started to plan this year’s Thanksgiving. Thanksgiving is normally big at our house, good food from the time I wake up until I go to bed. With sick family members etc and a  little drama, I’m not sure how this year’s Thanksgiving is going to turn out, but I will do my very best to make it amazing either way.  Thanksgiving is one of my all-time favorite holidays of the year, but as most of you know I love all the holidays but Christmas, Easter, and Thanksgiving are big at our house. Our 4th of July celebration is always amazing at our house as well.  What’s your favorite holiday? 🙂

Ingredients:

1 Clove of garlic

2-3 TBS Butter

2 slices of ham

Cheese of your choice. ( preferably to different types of cheese.)

4 slices of bread

Directions:

  1. Heat up the panini grill. Add the butter into a small bowl. Add in the garlic. ( use a garlic press.)
  2.  Add a thin layer of garlic butter on all four slices of bread. Then add one layer of cheese on two of them. A slice of ham and another layer of cheese. Put the other slice of bread on top and put them both in the panini grill for a few minutes.
  3.  When the toast is done, cut them in half diagonally and serve them up as is or with fires on the side.

This recipe is super easy and so incredibly tasty and perfect as lunch, breakfast or a midnight snack any day of the week. I really hope you love this recipe as much as we do.

Hetty’s baking gone wrong

Hey everyone!

Today was the day, the day I baked cookies for the first time. (That I can remember.) I hope y’all are having an amazing day so far. My baking skills are a little touch and go, sometimes I nail it and sometimes I don’t. Today I would say it went half and half. The cookie dough was perfect, when I took them out of the oven they tasted really good. But, yes there is a but, they looked like — I don’t really know what, maybe a super slim pancake or something like that. Well, not really that either. As I said; I don’t really know what they looked like but they were flat as could be, and barely hanging together. But I’m not giving up, I’m going to bake cookies over and over again until I get it right. maybe not right away but I will continue my cookie baking soon.

I’m kind of excited that I got some baking done today even though I had no idea if it was going to end up good or bad, sometimes you just have to jump in head first and just go with the flow. There is a chance it will turn out great and there is a chance it will turn out not so great but all in all, it’s at least worth a try if there is a chance of the result being great.  Never giving up is key to everything, career, cooking and everything else you want to learn. The first time you try to play the guitar you most likely will suck, but after trying over and over again and trying turns into practicing and before you know it you’re a natural. Never giving up is the key to everything, including my cookie baking.

I’m planning on doing something baking related later this week as well, it’s baking with a twist — sort of.  I’m not sure which day this will be happening yet, but hopefully, it will be great. I’m not going to reveal what it is yet but what I can say is that it has something to do with apples.

Halloween is soon upon us, and this year my mom and I are having a horror movie night. we are going to binge watch the best horror movies on Netflix, maybe we end up renting some as well. We’re going to light candles all around our living room and we’re curling up on the couch and buy some great snacks. We’re both looking forward to it and I’m sure it’s going to be amazing. I might have mentioned all of this before but my mom is really excited about it and so am I.

New week with Hetty

Hey everyone!

It’s Monday and the beginning of a new week. A new week filled with new opportunities, new doors to open and new dishes to be made. You never know how the week will turn out but I’m going to do my very best to make it an amazing one.

I have this weeks post ready, but I will not be revealing what’s to come just yet, there will be at least one post a day and I there will be some baking. Starting tomorrow I will do my best to bake chocolate chip cookies. I’m almost embarrassed to say that I’ve actually never made that before. Maybe when I was a kid with my grandma. But not any times that I can recall for the time being. It might end up being a disaster but if I’m lucky it will turn out ok. I’m sure it will be fun either way.

Baking on a Tuesday should be fun, there might be some changes but if everything goes after the plan I’m baking tomorrow.

I got a pumpkin delivery today and I’m super excited about it, I don’t have a carving set so I’ll have to buy that on Friday when I’m going to the grocery store. But I’m excited about it. What’s your favorite pumpkin dish or drink? Leave a comment down below and let me know! This could be fun.

Hetty’s Sunday not so fun day!

Hey everyone!

Sunday, this week have gone by faster than a car on the racing track. That said, it’s been a pretty great week and I hope the next one will be too. The family situation has not changed, itæs sort of on hold until further notice, and all we can do is wait until my mom gets an appointment with a specialist. Then we will know more, but until then we just have to wait and see.

I was supposed to bake cookies today but I was short on eggs, so I’m planning to reschedule the cookie baking for next week. Other than that I got shocked when I saw that my dinner had expired. The meat I bought last week was supposed to have a two-week expiration date and it had already expired before we even got it. Dumb as I was I didn’t realize that before today. We are for sure going to complain about this to our food delivery service that we use. Anyway luckily I had some ground beef and a pasta sauce so I managed to cook together something then and there. Saved by the pasta I guess. I’ve been working on next weeks food plan and blog plan and everything related to that today and I think that next week will be interesting, hopefully, it will be a good week but you never know until it’s there I guess.

Today we’re having a movie night, and we’re renting I feel pretty. I’m excited about it, the trailer looks great so I’m hoping we’ll like it. Have you ever seen it before? If you have seen it leave a comment down below and let me know if you liked it or what you thought about it.

Hetty’s Cinnamon Buns

Hey everyone!

What a Saturday, I woke up and decided that today was the day I was baking cinnamon buns. They looked like bugs bunny ran into a pole. But on the bright side, they tasted amazing. Some even looked better than others, but all in all, they were really good. It might take me a few more times to get them to look as good as they taste. I’m not giving up yet.

Ingredients:

1 Egg

0.03 oz fresh yeast (50g) ( you can use dry yeast instead.)

1/2 Teaspoon salt

0.6 Cups Sugar

6 Cups Flour

5 oz. Butter

Ingredients for the filling:

14 oz. Butter

1.6 Cups sugar

6 TBS Cinnamon

Directions:

  1. Preheat the oven to 475 degrees. Melt the butter in a saucepan and add the milk. Let the mixture be finger warm. Crumble the yeast in a large mixing bowl. Add a little of the liquid. Stir until the yeast is dissolved. Pour in the rest of the milk mixture.
  2. Add salt, sugar, and the egg. Pour in most of the flour, but save some of it for later. Mix it all well together until you reach a smooth and slightly loose dough. Put the dough aside on warm place and let it rise until it’s doubled in size, covered with plastic wrap or a kitchen towel. ( About 30 minutes.)
  3. Stir together butter, sugar, and cinnamon for the filling with a mixmaster. Divide the dough into two pieces. Roll it out,  cover it with the filling by using a spatula. Roll it up together and cut it into  2 cm wide pieces. Do the same with the other part of the dough as well.
  4. Place the buns with the cut surfaces facing upwards on the baking sheet with baking paper. Let it rise to double the size. ( 30 minutes)  under plastic wrap or a kitchen towel. After 30 minutes; Brush with one whisked egg and sprinkle with sugar. Put it in the middle of the oven, for about. 7 – 8 minutes. Cool the cinnamon buns on a grid.
